Any dynamic variable that can be experimentally measured is an observable.
A system observable is a property of the system state that can be determined by some sequence of physical operations.
An Hermitian linear operator corresponds to an observable. Not all operators correspond to observables. The eigenvalues of an Hermitian operator or observable is real.
Observable measurement: given an observable (operator) A, the possible system states for this observable will be its eigenfunctions and the associated eigenvalues are the only possible outcomes of the measurement of the observable.
